Today was bread baking day with a new bread machine with a gluten free setting.
I have tried my existing machine several times without very much success. I looked for one that was less than $100.
I found the Breadman-Convection Ultimate Bread Maker-Stainless-Steel-TR2500BC on Best Buy for $69.99, but it has been three days without saying whether it is in stock. For Best Buy that usually means, they are out of stock. I was at Costco and saw the Cuisinart BMK-200PC for $69.99 (3 yr limited warranty) that said it had a gluten free setting. I decided to buy it and give it a try. The one linked to is convection, mine is not.
The loaf turned out very good. Texture and taste is just like regular bread!
Gluten-Free Nut and Seed Bread
1 1⁄3 cups Low fat milk, 80°–90°F ( used 2%)
3 tablespoons Unsalted butter, cut into 1⁄2-inch pieces at room temperature
3 tablespoons Molasses
1 Egg, large, at room temperature*
3⁄4 teaspoon Cider vinegar
1 1⁄2 teaspoons Salt (used Kosher- looks like sea salt)
1 cup Garfava flour (used chickpea)
1/2 tsp Ginger, powdered ( if beans cause a gastric problem)
3⁄4 cup Tapioca flour
1⁄2 cup Sorghum flour
1⁄2 cup + 1 tablespoon Cornstarch
2 tablespoons Potato starch
2 teaspoons Xanthan gum
1 teaspoon Gelatin
1⁄2 cup + 1 tablespoon Mixed chopped nuts + seeds (walnuts, pecans, sunflower seeds, pumpkin seeds) used unsalted roasted sunflower and walnuts
2 tablespoons Currants (used tart cherries
2 1⁄4 teaspoons Yeast, active dry, instant or bread machine (used bread machine yeast)
Add the milk, butter, molasses, eggs and cider vinegar and salt to the bread pan fitted with the kneading paddle.
Stir the flour mix ingredients together in a separate container to incorporate and then add to the bread pan. Smooth it out so no liquid comes thru.
Add the Add Ins to the bread pan
Add the yeast to the bread pan last. Place
Press Menu and select Gluten Free.
While the dough is mixing and kneading, scrape the sides of the bread pan with a rubber spatula to fully incorporate ingredients. When cycle is completed, remove bread from machine and transfer to wire rack to cool. Bread slices best when allowed to cool.
* Gently and safely warm cold eggs by placing whole eggs in a bowl and covering with moderately hot tap water for 10 minutes.
